Ornellaia on Bolgheri ja ka kogu Itaalia üks ilusamaid ja kuulsamaid veinimajasid. Hoolimata sellest, et mõis on asutatud alles 1981. aastal, on see juba mitu korda omanikku vahetanud. Praegu kuulub see Toskaana raudvarale - Frescobaldi perekonnale. Kokku valmistatakse veini rohkem kui 75 hektaril, enamus veiniaedu asub Ornellaia mõisa ümber ning väike osa naaberpiirkonnas Bellaria's. Aedade pinnas on väga erinev, mis võimaldab kasvatada Cabernet Sauvignon, Cabernet Franc, Merlot ja Petit Verdot viinamarju. Ornellaia on Itaalia üks kuulsamaid ja parimaid veine, mida tihti nimetatakse ka Itaalia „First Growth“ veinimõisaks. 

Ornellaia on valmistatud tüüpilistest Bordeaux viinamarjasortidest. 2019 aastakäik on valmistatud 62% Cabernet Sauvignon, 31% Merlot, 4% Cabernet Franc ja 3% Petit Verdot viinamarjadest. Marjade koristusega alustatakse septembri esimestel päevadel (Merlot) ning lõpetatakse oktoobri esimestel päevadel (Cabernet). Kõik viinamarjad koristatakse eranditult käsitsi väikestesse 15 kg mahutavatesse kastidesse. Veinimajas toimub hoolikas topeltsorteermine ning kõikidest eri aedadest valmistatakse eraldi vein. Parim valik läheb loomulikult Ornellaiasse ning eraldi selektsioon toimub mõisa teise ja kolmanda veini jaoks. Kääritamine toimub terasmahutites 26-30 kraadi juures 7 päeva ning veinivirre on kestadega kontatkis 15 päeva.

Kobaratelt eemaldatakse kõik varred ja pressitakse õrnalt. Alkoholkäärimine toimus osaliselt keskmise suurusega tammemahutites ja osaliselt roostevaba terasest mahutites, temperatuuri hoitakse alati alla 30 kraadi. Igast viinamarjasordist ja igast viinapuuaiast valmistatakse eraldi vein. Alkoholkäärimisele järgnev leotus kestis 25 – 30 päeva ning seejärel suunatakse vein Prantsuse tammevaatidesse. Vein laagerdub kontrollitud temperatuuriga veinikeldrites kokku 18 kuud (iga marjasort ja iga aed eraldi vaatides). Pärast esimest 12 kuud loodi eri vaatidest põhisegu (assamblage) ja seejärel laagerdus see tammevaatides omakorda 6 kuud. Seejärel eemaldatakse vein settest ja filtreeritakse ettevaatlikult ja pärast villimist pudelisse hoitakse veini keldrites minimaalselt 12 kuud. Iseloomult on vein väga elegantne ja värske, Bordeaux tipp-veinidelt tuntavate nüanssidega.
